Sharon’s Chicken Delight

Ingredients for 1/2 Chicken Recipe:
½ chicken
1 rice bowl shallots (peeled n sliced / bash lightly with chopper)3 green n 3 red chillies seeded
⅓ rice bowl light soy sauce
2 heaped tbsp Baba Meat Curry Powder
2 ripe tomatoes (quartered)

Method:
1. Heat 4 tbsp oil in wok n fry shallots till fragrant n slightly brown.
2. Add soy sauce, fry quickly then add curry powder, lower heat, don’t burn.
3. Add chicken slices n stir fry, add a little water n keep during n frying. Add in chilli slices n tomatoes.
4. Add 1 tsp dark soy (for colour) & 1 cup hot water. Mix well.
5. Cover wok n let simmer.
6. Check if enough water….can add a little if needed.
7. Cook for 15 min n taste.
8. Add a bit of sugar.
9. Check for taste n “doneness”.

Remark: Tastes better overnight.
